We source olives from carefully chosen, small-scale farms across Turkey — the birthplace of olive cultivation. Our flagship oils come from Aydın and Edrimit, but we work with trusted growers from a variety of regions, each bringing their own unique flavor profiles.

Yes — every bottle in our Elysian Reserve and Heritage Grove Series lines is single-source, meaning it comes from either one farm and one harvest or all from a single cooperative. Each cooperative is made of farms all a part of the same region, agree to the same practices, and are harvested together. Our Harvest Table Collection includes artisan-crafted blends or lighter oils that will be ideal for cooking while still maintaining premium quality.

It all begins with the land in the ancient groves in the Eastern Mediterranean where olives have been cultivated for thousands of years. We partner exclusively with farmers who use sustainable, responsible methods and press their oils with care. We personally visit each grower, building relationships rooted in trust and respect. Our oil is never mass-produced. It’s crafted intentionally, in small batches, and deeply anchored in tradition.

We’re especially proud to work with small, local farms. These partnerships not only ensure the highest quality oil, made by those who deeply care for their trees and their craft, but also give these family-run groves a rare opportunity to share their exceptional oil with the world.

Yes. All of our oils meet or exceed international standards for extra virgin olive oil (EVOO). That means they’re cold-pressed, unrefined, and made without heat or chemicals. We test every batch to ensure high polyphenol content and exceptional taste.

Many of our partner farms use organic or regenerative practices, and we’ll be identifying certified organic oils on each product page as they become available. Because we work with small farms, some oils may not yet have formal certification but still follow organic principles.

Absolutely. Our Harvest Table Collection is crafted with cooking in mind — perfect for sautéing, roasting, or finishing dishes. For high-impact flavor and raw applications like dipping or dressings, we recommend the Heritage Grove or Elysian Reserve lines.

Keep your oil in a cool, dark place — away from heat and light — and always close the lid tightly. With proper storage, it will stay fresh for many months after opening. We recommend using it within 6 months for best flavor.
